Manually adjust device type

The device type is currently determined based on the operating system—this works in most cases, but there are exceptions where it makes sense for us to be able to assign the category ourselves.
Example: A workstation running exclusively camera server software is listed as a workstation by standard Windows 11, but should be listed among the servers; the same applies to a virtual PBX system.
